Glycation of aspartate aminotransferase by methylglyoxal, effect of hydroxycitric and uric acid

Abstract

The objective of this study was to investigate the inhibitory effect of hydroxycitric and uric acid on middle stage of protein glycation using the model containing aspartate aminotransferase and methylglyoxal.
