Flavonoids

Abstract

The flavonoids are a large group of plant secondary metabolites categorized as phenolic compounds. Their wide distribution in the plants makes them the most abundant phenolics in the human diet.

Because of a wide range of biological activities, flavonoids are extensively studied for several decades. Although flavonoids provide numerous beneficial properties to human health, they are foreign compounds, the administration of which into the human body should be considered with caution.

The aim of this chapter is to summarize the knowledge about the flavonoid metabolism and their interactions with important metabolic pathways with a special attention paid to the human health aspects.
