Abstract

Second of the series of two articles deals with the interaction of the nutritional components and theimmune system. The nutrition is composed from a complex of components that are recognized by theimmune system as antigens and might induce the immune response.

The interaction of such structures andthe immune system is carefully regulated and results in the tolerance of the nutrition. Here, thecharacteristics of the antigenic properties of carbohydrates, lipids, proteins and basic minerals andvitamins are defined in the context of their interplay with immunity.

Short summary of pathological statesarising on the immunological border between nutritional components and organism, as are inflammatorybowel diseases, celiac disease and food allergy, is added to the overview of the immune system-nutrition.
