Application of peptide mass mapping on proteins in historical mortars

Abstract

The problem of identification of proteinaceous binders in historical mortars and plasters has not been satisfactorily solved till now. In this paper the possibility of peptide mass mapping in connection with mass spectrometry is demonstrated.

The presence of milk and collagen proteins was successfully proved in the samples of mortars taken from the Romanic rotunda of Saint Catherine in Znojmo (Czech Republic).
