Abstract

The Chapter outlines business in production of Olomoucké tvarůžky (Olomouc curd cheese), an original moravian cheese, from an end of 19th century to the end of the thirties. Furthermore it observes not only possibilities and limits of entrepreneurs with different amounts of capital resources, but also development of this branch of dairy industry as a whole.
