Abstract

Management of the catering quality at Hilton Prague and the dialysis center by B. Braun Avitum, are there really two different worlds? The author, an active participant in the Conference Bon Appetit - the joy of Dining in Long-Term Care held in Prague on October 21, 2013, based on his extensive experience in the hotel industry at middle management level in 4 and 5-star hotels.

During this period he was in direct contact with the hotel's gastronomy and hotel service excellence. This experience greatly influenced his relationship to food, especially the perception of quality and service as a whole.

This more than 20 years long lasting experience confronts with his new catering experience in health and social care facilities. He focuses on the specifics of dialysis centers catering by B.

Braun Avitum CZ / SK group, where he currently gained more than 5 years of experience in operations and quality management. Author compares both "worlds" and finds common link in the end.

This is the human being, once a client hotel guest and in the second case as a client or patient in health and social care facilities.
