Immunopathogenesis of nongluten wheat grain protein in digestive disorders

Abstract

Wheat inhibitors of amylase and trypsin are considered as allergens in baker's asthma and wheat allergy. Recently, persuasive adjuvant properties of wheat inhibitors of amylase and trypsin on monocyte and dendritic cells mediated by Toll-like receptor 4 (TLR4-MD2-CD14) complex suggest their role in development of immune reactivity against wheat proteins potentially leading to induction of non-celiac wheat sensitivity but also to celiac disease.

Our review summarizes current experimental and clinical data on the immunological properties of these inhibitors.
