Methodology for qualitative evaluation of fruit and processing products of content substances beneficial to human health

Abstract

The certified methodology is intended for apple growers, consumers and distributors. The methodology is a useful source of information for growers, consumers and traders.

It also comprehensively solves problems of selected chemical methods for detection of substances with antioxidant activity and recommends suitable routine methods for their determination in practice. Given the increased interest in fruit with a high antioxidant content, there has been an increased interest in the analysis of foods that may be potential sources of these substances.

Consumers are starting to monitor the content of healthy substances in apples to maintain the health of the current population of children, adults and the elderly. Based on the results obtained and description of this methodology can be said that the high content of phenolic substances and at the same time high level of healthy substances with antioxidant effects have the varieties 'Angold', 'Artiga', 'Lady Silvia' and 'Rubinola', 'Topaz', 'Jarka', new breeds 'HL 1651', 'HL 2010' and 'HL 207'.

The information obtained can be used in the processing industry for the formation and manufacture of processing products such as ciders, juices, dried crusts while maintaining a high level of these substances. These products then represent another way to transfer substances with an antioxidant effect to the body rather than eating fresh fruit.
