Rapid Determination of Major Minerals in Yogurt Using Microdialysis On-line Connected with Capillary Electrophoresis

Abstract

A new analytical apparatus is described based on on-line connection of the rapid capillary electrophoresis with a continual micro-dialysis sampling. This apparatus was utilized for simultaneous estimation of four major minerals, K+, Ca2+, Na+ and Mg2+, in commercial white yogurts.

The release of cations from organic structures is achieved simply by short digestion in boiling 6 M HCl. The complete separation of the four cations is achieved in 40 s.

Within reliability interval, the total mineral content estimated by the reported method equals to both that stated at the label of commercial yogurts and that estimated in comparative flame atomic absorption spectrometry. RSD of the electrophoretic estimation is around 5 %.
